Garlic Parmesan Chicken

This recipe has quickly become a staple in our house. I was running behind one evening and needed something quick and easy that used ingredients I already had in the house. I wasn’t sure how I’d like it as I’m not normally a fan of mayo, but it was incredible. Hubby even requested I make it again two days later, and now we easily eat it once a week.

The recipe originally came from Cakes Cottage, but I made a minor modification of my own that I think really improves the taste. I learned a long time ago that lemon and chicken go well together, and I wanted something to cut the mayo taste a bit. Turns out, you don’t really taste the mayo anyway, but the lemon juice adds a richer flavor, so I’ve kept it in.

Garlic Parmesan Chicken

Ingredients:

  • ½ cup Mayonnaise (we use organic mayo and it tastes so much better)
  • ½ cup shredded or grated Parmesan cheese – it works well with either one
  • 2 boneless skinless chicken breast cutlets.
  • 4-5 teaspoons Italian seasoned dry bread crumbs
  • ½ teaspoon garlic powder
  • salt and lemon pepper to taste – don’t skip this step, it’s important!
  • 1-2 tablespoons lemon juice

Instructions:
Preheat your oven to 400 degrees.  In a small bowl combine mayo, lemon juice, garlic powder and parmesan cheese. Though the original recipe calls for 4 chicken breasts, I find the ingredients work best on 2 – sometimes I’ll take a thick chicken breast and cut it into 2 filets. Sprinkle the salt and lemon pepper over the chicken breasts.  Divide the mayonnaise mixture evenly among the chicken by spreading it across the top of each piece – don’t pour it over the whole pan, you just want to cover the tops of the chicken. Bake for 20 minutes then remove it from the oven and sprinkle bread crumbs on each piece of chicken – don’t use too much or it ends up with a gritty texture. Return the chicken to the oven and bake for additional 20 minutes or until chicken is cooked thoroughly and juices run clear.  Tops will be browned and chicken will be incredibly juicy.

So the next time you’re in a hurry, give this a try. But expect to add it to your regular menu, because it’s really just that good!
