Parmesan Roasted Carrots

I cannot praise this recipe enough. I’ve eaten it twice this week, and it’s in our regular meal rotation. For us, I actually cut the carrots into carrot sticks rather than using whole carrots, and I’ve swapped out olive oil in place of the butter to make it a little healthier, but it’s fantastic any way you eat it.
